PUMPKIN SPICE BITES
We love a lil something sweet as we go through our day, whether it be an after dinner treat or an afternoon pick-me-up. Given that it’s the season for pumpkin-flavored goods, we wanted to share our take on a sweet pumpkin treat.
Perfect for bringing to a holiday gathering & sharing with your loved ones.
As an added bonus, this recipe is GF, vegan, and refined sugar free :)
Yields about 10 bites
Total time: <15 minutes
Ingredients you’ll need:
3/4 cup oat flour
3/4 cup almond flour
2 tsp cinnamon
2 tsp pumpkin pie spice
1/4 cup pumpkin purée
3 1/2 tbsp maple syrup
1 tsp salt
optional: 1 tsp ground flaxseed for those hormone healthy fats ;)
For the dipin’ mixture:
3 tbsp coconut sugar
2 tsp cinnamon
2 tsp pumpkin pie spice
Now, let’s get rollin’:
Place all ingredients in a mixing bowl. No particular order necessary
Mix all ingredients together. We like to use our hands, so get in there and mix your heart out
Once thoroughly mixed, shape into balls (the mixture is on the dryer side, but if you’re needing/wanting extra moisture add a tad more maple syrup & pumpkin purée)
Once formed, grab your *dippin’ mixture* and roll each ball in said mixture - generously
Place finished pumpkin spice bites onto a plate and sprinkle with the remaining dipin mixture for some extra sweetness
Storage tips: these bites can be stored on your countertop for up to 3 days. The longer they sit the better! And don’t worry, if they start to look a little wet (we know that sounds weird!), it is completely normal.
