LOADED SWEET POTATOES

 
 

In this present moment, we find ourselves craving more dense, hearty, & warming foods. 

These loaded sweet potatos give a glimpse into how we consciously choose to listen to our bodies and nourish ourselves with recipes that make us feel our best.

Serves 2

Total time: 1 hour & 15 minutes 

Ingredients you’ll need: 

  • 2 medium sweet potatoes

  • 1lb ground turkey/beef/chicken

  • 1 ripe avocado

  • 1 tbsp olive oil

    For the sauce:

  • 1 tbsp Primal Kitchen mayo

  • 1 tbsp Primal Kitchen ketchup

If wanting to add more nourishment -

  • sauerkraut (pickled cabbage/onions)

  • nuts/seeds to garnish 

  • sautéed mushrooms in soy sauce/tamari

Let’s get cookin’: 

  • Preheat oven to 450° F

  • Wash 2 medium sweet potatoes & dress each with olive oil

  • Poke each potato a few times before placing on a baking tray - place baking tray with potatoes into your preheated oven

  • While potatoes are baking, cook ground turkey/beef/chicken over medium heat until fully cooked

  • Once potatoes start to caramelize (around 45 minutes) take out of oven. Let cool

  • Cut each potato down the middle & stuff with all of your toppings :)
