BLUEBERRY OATMEAL BAKE

This blueberry oatmeal bake is a constant must-have in our fridge. We make at least one batch a week and have it for breakfast, lunch, or a snack! Not only does it keep really well in the fridge and is super simple to make, but it is also reallllyyyy delicious. Plus, it’s an easy dish to make all year round, as you can use fresh or frozen blueberries in the mix.

Major perks: gluten-free and vegan-friendly.

There are many wonderful baked blueberry oatmeal recipes out there; ours was adapted from the popular blog, Eating Bird Food ~ fitting, if you ask us.

Ingredients you’ll need:
• 2 cups gluten-free old-fashioned rolled oats
• 1 teaspoon aluminum-free baking powder
• 1 1/2 teaspoons ground cinnamon (or a dash more if you’re a cinnamon lover)
• 1/2 teaspoon Himalayan pink salt
• 2 cups unsweetened oat milk (or favorite plant-based milk of your choosing)
• 1/3 cup pure maple syrup
• 2 eggs (if you’re plant-based, opt for 1 tablespoons ground flaxseed + 3 tablespoons water, stir & let sit for 10-15 minutes )
• 2 teaspoons pure vanilla extract
• 1 1/2 cups fresh or frozen blueberries (or you can skip the measuring cup on this one and grab a few healthy handfuls)
• cooking spray of choice (we prefer coconut or avocado oil)

Let’s get cookin’:
• Preheat the oven to 375°F.
• Spray an 8-inch square baking dish with cooking spray.
• In a mixing bowl, mix together oats, baking powder, cinnamon, and salt.
• In a separate mixing bowl, add in the milk, maple syrup, eggs (or flax “egg” replacement), and vanilla. Stir well.
• Add wet ingredients to dry, mix well, then gently fold in the blueberries.
• Pour mix into coated baking dish, making sure the blueberries are distributed evenly throughout. Add a few more on top if you’d like.
• Bake for 45-55 minutes. The top should be golden with the middle set. Remove from oven and let cool for a few minutes before cutting into desired portions.
• Top with an extra drizzle of maple syrup &/or nut butter of your choice — or nothing at all! Dealer’s choice.
